Does anyone remember why it was rescheduled the first time?

Probably because the original October game would have -- at the very least -- not had a stadium confirmed until a week or two ahead of time and they wanted to sell tickets for the Son/LAFC game without being fearful of having to play it in New Jersey.
I think this is likely because I'm pretty sure there was no official reason announced and no apparent conflict for either team.
I'm annoyed at this second change because I have 2 games coming up I will be out of town for and I was going to trade into this game for one of them. There aren't any other games coming up that work as well for me to bring someone. There are possibilities after the WC but our schedule months out is of course harder to predict. I hate that we now have to trade in and trade back simultaneously.

I’ve complained about the new ticket exchange process before and I’m going to echo mgarbowski and what he said before. This schedule changing and flip flopping makes it extremely difficult to plan ahead. I’m glad it moved away from the May Wednesday (as I couldn’t attend) and now it’s on another date I’m not sure I can attend but it may too late to change tickets out if I wait to get closer to see when the game goes.
Also, why would we put a prime game that people want to go to on a Wednesday? This should 100% be a weekend matchup.

Maybe........I predict Brad Sims towards the middle of the summer window will come with some nonsense along the lines of: We are searching for a DP but also Alanso's rehab is going great and we think he could be back for the playoffs. You know it's important for us to take our time and find the right guy. Choosing the wrong player can really set you back . Locker room culture is so important to us, any player joining the club must submit a 20000 word essay about why they love NY and of course they must have an acceptable astrological sign and one of our 5 approved myers-briggs personality types. They must also come from Europe or South America and be between 25.25 and 26.5 years old. So I can tell you we will sign someone but we are still searching for the right player and we have no idea why it takes us longer than other clubs to sign players.
The longer it drags out the more annoyed I get about the whole 'we can't possibly sign someone whose skill set overlaps with Martinez' thing. You don't know when he'll be back! You don't know if he'll be any good if he does come back! More than one player is allowed to score goals!
