M7mcfc here from Salford, UK. Been reading your forum without joining for a while now. Joined today as I need some advice from you guys.

My other half is off to NY in November and actually arrives on Thanksgiving now my question is if there will be anywhere she can change Sterling into Dollars that day/weekend as it is the holidays or should she just change all monies here before she gets there?

You should check to see whether your/her bank has an international partner in the US. My bank here partners with Barclays, so when I was in England I was able to draw £ from Barclays' ATMs without any additional fees, as though I were using my bank's ATM.

I would guess the conversion rate is probably not as favorable as some currency exchanges, but it was a lot easier than trying to plot out exactly how much cash I would need in advance

Personally I exchange a modest sum at my local bank before I leave the country. Keep a portion in my wallet & the rest secured in my carry on. When possible, I pay with credit card. In the US most places don't have a chip reader, so she'd actually have to sign. But make sure her credit card doesn't charge foreign transaction fees before going that route.

Banks will likely be closed for thanksgiving but in the airport there's bound to be a currency exchange open.
