You chargrill them and turn them into perfection. You can also fry them and put them on a delicious poboy sandwich.

My only experience with oysters are in their fried form stuffed in a roll and covered in lettuce and remoulade. Last po boy I had was at the Wharf on the bay side of the Rockaway. It was OK, if not a little gritty for my taste. They were much better on the Grand Strand in South Carolina.

Speaking of oysters ... which to me means speaking of delicious and interesting animals to be eaten, I just had a great meal at Toro (over by the highline) I had the veggie paella and smoked eggplant and a badass pepper dish, but the meat eaters at my table had some apparently banging oysters, bone marrow, and octopus head salad. So yeah Toro - try it
